Kerry's sulphur free dried fruit

The peaches and apricots are grown on a farm in Ladismith. The peaches are hand pealed individually. The fruit is sun-dried on large wooden pallets in the hot Karoo sun. No preservatives are added. Trees are sprayed with only organic insecticide.

The fruit that hangs on the tree longer has a higher sugar content than those that are harvested immediately. While drying in the sun, those fruits with higher sugar will darken quicker, sometimes even flatten out. The apricots seem more susceptible to higher sugar therefore look darker.
